Another Favorite Taste of Crete, Tapenade

- 3 cups kalmata olives (pitted)
- 5 cloves roasted garlic
- 1/4 cup extra virgin olive oil
- 3 heaped tablespoons flat leaf parsley
- 1/4 cup lemon juice
- generous pinch sea salt
- black pepper
- combine all ingredients in a food processor and blend until just before it gets to a paste. While there are still small chunks of olive, about the size of the tip of a new crayon. Best served the next day.
