When the boys and I went to visit Dan while he was deployed overseas, we went to a great little pizza place just down the road from his apartment. The first night we went there,Jeffy was so tired, he tried to call onto the dining table and sleep there. He was not happy I wouldn’t let that happen. Another time I spilled red wine on our middle boy David, somehow the red wine magically disappeared. Not even a trace of a stain on his clothes. I was lucky. With all of these fun memories, one of the BEST memories I have is the tapenade they would bring out as an appetizer. We would fight over who got the last satisfying bread anointment. About 3 months after my husband was finally home for good, we decided to try to replicate it. I am SO glad we did. This stuff is intoxicating. And not the kind of intoxicating that makes it illegal to drive afterward. Spread on toast, with bread sticks, in a sandwich, with fresh veggies to dip…it’s just plain good and SO EASY to make!!!

Another Favorite Taste of Crete, Tapenade

Ingredients

  • 3 cups kalmata olives (pitted)
  • 5 cloves roasted garlic
  • 1/4 cup extra virgin olive oil
  • 3 heaped tablespoons flat leaf parsley
  • 1/4 cup lemon juice
  • generous pinch sea salt
  • black pepper

Instructions

  1. combine all ingredients in a food processor and blend until just before it gets to a paste. While there are still small chunks of olive, about the size of the tip of a new crayon. Best served the next day.
