Another Jam-tastic Breakfast Treat. Chocolate Raspberry Jam Swirl Rolls

Come on! I mean, really. I have already licked the screen. Even though I KNOW the scrumptious taste isn’t there, I STILL want to lick it AGAIN! These are spectacular. ROYALTY of ROLLS. With raspberries, smooth, dark chocolate. They are perfection rolled up into more perfection. The most important part of these is good quality ingredients. I use Driscoll’s Berries whenever possible. I find they are the most consistently sweet, juicy and there are VERY few, if ANY bad ones in the basket. I like that. I use the highest quality chocolate I can get my hands on. That can vary greatly depending upon where you are. Just do the best you can.
Our family has cinnamon rolls on special occasions. We love them. They are part of our lives. I will always love them, but it never hurts to have another beloved go to. THIS is IT! Well, as I mentioned in the previous post (and also where you will get the much needed recipe for the chocolate raspberry jam); my husband and I occasionally have to visit a super store that is NOT super in my opinion…BUT, it did provide the inspiration for these beauties. So thank you super-store for helping to create royalty and our other beloved go to.
Chocolate Raspberry Jam Swirls
Ingredients
- 4 teaspoons yeast
- 1/2 cup warm water
- 4 tablespoons sugar
- 1 3 oz. package instant vanilla pudding
- 2 cups cold milk
- 2 large eggs (plus two egg yolks)
- 1 1/2 cup unsalted butter (divided)
- 1 teaspoon sea salt
- 6 cups all purpose flour (plus some for kneading and rolling)
- 1 1/4 cup chocolate raspberry jam (recipe in previous post)
- 1 cup good dark chocolate (roughly chopped)
- 1/2 pint fresh raspberries
- 3 cups powdered sugar
- 1/2 cup milk or cream
- 1 teaspoon vanilla or raspberry liqueur
Directions
| 1. | Melt 1/2 cup butter and set aside. | |
| 2. | combine yeast, warm water and sugar. Set aside to bloom. (foam up a bit) | |
| 3. | In stand mixer, combine pudding mix and milk and prepare according to package directions. Add eggs whisk until completely incorporated. | |
| 4. | Add melted butter and whisk, then add yeast mixture and stir gently. Change the whisk to a kneading hook if you have it. | |
| 5. | pour the flour into the liquid mixture and knead on low to low-medium low until bread dough is smooth and pulls from the side. ( I knead about 5 minutes) | |
| 6. | Place bread dough in large non-metallic bowl that is lightly oiled. Cover lightly with plastic wrap and a warm damp towel. Set in warm draftless place to rise until doubled in size. | |
| 7. | grab one side of dough and lift it and stretch it. Fold it over onto itself while it is still in the bowl. press down firmly with your finger tips. Repeat this a few times then cover and allow to rise again. | |
| 8. | Lightly flour a large clean surface and place the dough onto the surface. Press down and shape into a rough rectangle. roll to about 1/2 inch thickness. In the center 1/3 of the dough , place thin slices of 1/2 cup butter. Fold the right 1/3 of the rectangle over the butter, and then the left side...like folding a letter for an envelope. Roll into another large rectangle, (about 12 inches long, 6-8 inches wide). Again, in middle 1/3 of dough place thin slices of the other 1/2 cup butter and fold the dough the way you did before. Roll back into that 12 inch long rectangle. | |
| 9. | Slather the jam to cover all of the dough. Sprinkle the chocolate all over that and then fresh raspberries. Roll everything up from the long side closest to you up (tightly). Cut into 2 inch rolls and place into a greased or buttered 9x13 inch pan. Gently cover and allow to rise until double. If you want the rolls to be even bigger, you can use 2 8x8 inch pans to give the rolls more room. | |
| 10. | Preheat oven to 350 degrees F. Bake risen rolls for 35-40 minutes until the center roll isn't gooshy when you gently press it. | |
| 11. | While the rolls cool, mix the powdered sugar and cream until smooth. Drizzle over the rolls when they are warm. |

They are surely a wonder. The rolls are tender and perfect. The chocolate is a surprise, even though I knew it was coming… And then the raspberries burst through. Ah, the memory is making me want another!
