Fresh Cherry Mojitos

August 15, 2012 in Brunch, Drinks, Pretty Pictures, Recipes by Fields of Cake

I don’t even know how to express to you just how amazing this drink is. I sincerely am speechless. It is the epitome of a Western Montana summer. It is sweet. It’s tart. It’s cool, thanks to the mint, and has lots of sparkle thanks to my SodaStream. I. Am. In. Love. (Don’t worry Dan and boys. I still love you best…mostly completely)

You will need to use the fresh cherry syrup I posted previously. So prepare and refrigerate that first. It’s most definitely worth it.

Fresh Cherry Mojitos

Fresh Cherry Mojitos

  • 4-5 dark, sweet cherries, pitted
  • 5-10 fresh mint leaves (to taste)
  • 1/4 cup cherry syrup (see previous post)
  • juice of 1/2 a lime (about a 1/4 cup)-you could sub in lemon
  • crushed ice
  • 1-2 shots good quality rum
  • seltzer to top off (I use my SodaStream, I LOVE it!)

  1. In 16 ounce glass, or jar, muddle (squoosh) cherries and mint to release juices.
  2. Pour cherry syrup and citrus juice over the muddly goodness.
  3. Add rum and stir.
  4. Add crushed ice half way.
  5. Pour a little seltzer and stir to mix it all together.
  6. Top off with seltzer. Gently stir.
  7. Enjoy the nirvana that is Fresh Cherry Mojitos
