I’m Changing My Life

When I say I am changing my life, it doesn’t mean I am leaving my family and becoming a shaman or anything. I am tired of being tired. I am sick of being “big”. Hell, I’m sick of being sick. It’s never anything detrimental but it’s there, waiting in the wings. I want health, energy, happiness. I am the only one who can change that…well with God’s help of course.

Yesterday was my first jog/run since my ankle surgery and it felt GOOD. My body aches this morning. In a good way. Last night I ate a BIG healthy salad. With creamy HEALTHY dressing!  I am super proud of this dressing. Even my husband liked it and he is a full on, only the fatty stuff will do Ranch guy. It’s made with organic Greek yogurt so it has LOTS of protein and calcium, avocados so it is filled with beta-seratol which has been known to drop cholesterol levels by as much as 17%, it has oleic acid which has been known to help prevent breast cancer. It’s good stuff! No mayo, no artificial stuff. Yeah. I’m proud.

So here’s to changing my life for the better. Healthier, happier; a better me.

Avocado Blue Cheese Dressing

Ingredients

  • 2 cups Buttermilk
  • 1 cup Greek yogurt (I LOVE Stonyfield Organic)
  • 3 medium Avocados (peeled and pitted)
  • 1/2 cup fresh flat leaf parsley (divided)
  • 1 tablespoon dried dill
  • 4 cloves garlic (chopped)
  • 6 green onions (chopped)
  • 1/4 teaspoon celery seed
  • 1 1/2 teaspoon sea salt
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon black pepper
  • 1 cup crumbled gorganzola blue cheese

Directions

1. Combine buttermilk, yogurt, avocados, half of the parsley, dill, green onions, garlic, celery seed, dijon, salt and pepper in a blender. Pulse until smooth
2. chop up the parsley even finer, stir in parsley and blue cheese. If it is a little thick, add more buttermilk. Taste and add salt and pepper to taste.
