The First Time I Ever LOVED Tequila

A few weeks ago, I was talking to my new friend Laura, and she told me about this tequila called Casa Noble. I like margaritas. As long as they’re on the rocks, but I have never been a straight up tequila kinda gal. Until now. Laura sent me some Casa Noble to try and I am in LOVE! Seriously, I never thought I would say that about tequila, but these people know what they are doing. It is a true experience! Recipes started to race through my mind. I was actually almost afraid my recipes would not do such nectar justice….I forge ahead anyway. These Tequila Lime Bars really are complimented with the hint of outstanding tequila. I am sad to see my beautiful little bottles of Tequila go. I have shared them (begrudgingly) with friends and family so they could experience what I was raving about. They raved too.

Another fun part of this recipe?  I only used TWO, yes TWO dishes! The pan I baked them in, and my Blendtec! (you know…you can still win one!  Go enter!). These were SO easy to make!

Tequila Lime Bars

Ingredients

  • 2/3 cups granulated sugar
  • 2 cups flour
  • 1 cup unsalted butter (softened)
  • 4 whole eggs
  • 1 egg yolk
  • 1/2 cup fresh lime juice (about 6-8 limes, depending on size)
  • 2 tablespoons finely chopped lime zest
  • 1/3 cup GOOD tequila
  • 1 1/2 cup granulated sugar
  • 1/3 cup flour
  • 1/2 teaspoon sea salt

Directions

1. Preheat oven to 350 degrees F.
2. In 9x13 pan combine flour and sugar then butter and smoosh together until it resembles wet sand. press into bottom of the pan and bake for about 15 minutes. Remove from oven and set aside.
3. In blender, combine eggs, egg yolk, juice, zest, tequila, sugar, flour and salt.
Pour onto crust and bake for 20 more minutes.
Don't worry if they look jiggly when you take them out. They will firm up once they cool off a bit.
