Won’t You Be My Sweet Potato?

When I was little. I did not like sweet potato. Well, I thought I didn’t like sweet potatoes. I only had them at Thanksgiving. They came out of a can, were sprinkled with tons of sugar then even more marshmallows. I know this is a spectacular feast for some…but it didn’t work for me.  So, when I found out that my husband liked sweet potatoes, I sighed and decided to suck it up and try again. You know what??  Sweet potatoes are REALLY, really good! Baked with butter and brown sugar, roasted with blue cheese and pepper. THIS recipe is my all-time favorite though. Sweet potato hash is just flat out good. It’s easy. It’s cheap, and goes with just about anything. (That sounds like an insult to someone doesn’t it? Luckily we’re talking food here.)

Sweet Potato Hash

Sweet Potato Hash


  • 5 Slices bacon (cut into 1/2 inch chunks)
  • 2 tablespoons extra virgin olive oil
  • 1 large sweet potato (peeled and cut into 1/2 inch cubes)
  • 1/2 small onion (minced)
  • 3 teaspoons taco seasoning
  • 1/2 teaspoon sea salt
  • 1/2 large red pepper (seeded and diced)


  1. Cook bacon in large pan until crispy. Remove bacon, leave bacon grease in the pan and add oil.
  2. Add remaining ingredients and cook over medium high heat until soft and browned, stirring gently often to ensure even browning.
  3. Sprinkle bacon in at the last minute to heat through.
  4. Serve hot.
